Toddler-Favorite Sweet Potato & Apple Muffins

Ingredients

  • 1 cup mashed sweet potato (about 1 small roasted sweet potato)
  • 1 medium apple, grated (leave the skin on for extra fiber!)
  • 1 ¼ cups oat flour (or blend rolled oats into flour)
  • ½ teaspoon baking soda
  • ½ teaspoon baking powder
  • 1 teaspoon cinnamon
  • ½ teaspoon vanilla extract (optional)
  • 2 eggs (or flax eggs for an egg-free option)
  • ¼ cup coconut oil or melted butter
  • ¼ cup milk (breast, dairy or plant-based)

Optional Add-Ins:
  • 1 tablespoon ground flaxseed or chia seeds for extra nutrients
  • ¼ teaspoon nutmeg or ginger for extra warmth
These soft, naturally sweet muffins are perfect for baby-led weaning (BLW) and toddler self-feeding. They’re packed with fiber and healthy fats, making them a great breakfast, snack, or on-the-go bite!

Instructions:


1. Prepare the Sweet Potato & Apple:


Roast or steam a small sweet potato until soft, then mash. Grate the apple and squeeze out any excess liquid with a paper towel.

2. Mix the Batter:


In a bowl, whisk together the mashed sweet potato, grated apple, eggs, coconut oil, milk, vanilla, and cinnamon.

In a separate bowl, mix the oat flour, baking soda, and baking powder. Slowly fold the dry ingredients into the wet ingredients until combined.

3. Bake the Muffins:


Preheat oven to 350°F (175°C). Grease a mini muffin tin or use silicone liners. Fill each cup about ¾ full and bake for 15-18 minutes, or until a toothpick comes out clean.

4. Serve:


Let cool slightly before serving. Serve whole for toddlers or break into pieces for younger babies.
